My tip (no photos though) is:

Take chicken breasts, cut them so they open like a butterfly and you can put them back together. Inside each breast but red pepper, mozzarella and pesto, close the breast, put in a high sided dish, fill the rest of the dish with other vegetables (onions, more peppers, mushrooms, whatever) and put it in the oven and bake. Nom nom nom!!!

Something I make often ... And usually everything is eaten :)

Chicken breasts - Cook them till they're JUST about done ... The size we get them in Denmark is about 6 minutes each side, on medium heat.
- Advice if you want some extra flavour, toss them in a bag with : Olive oil, Lemon Juice, Favorite Chili sauce (I use Sirracha) some soy sauce and salt pepper, can add other spices too as you please. Let it sit in the bag for some hours (the longer the better) - Prior to cooking them, the leftovers in the bag, adds awesome flavour to the pasta and/or sauce.

When they're done on the pan, but them to the side, in the same pan, add some varied veggies, I prefer spring onions, mushrooms red pepper... But whatever floats your boat, let them soak up all the yummy goodness, add cream if you want a sauce.

Cook some pasta till it's almost done (Little bite to it) toss it in the pan, mix it all up. Add the chicken breasts (I prefer to slice them up into bite sized pieces.

Let it all heat through. And voila, easy food!

By cooking it this way, you guarantee that the chicken doesn't go dry, incase the sauce needs a little longer.
